Thai Salmon Patties

Ingredients

serves four

1 x 400g tin of salmon, drained
¼ Chinese cabbage shredded finely
1 carrot, thinly sliced
1 cucumber thinly sliced
1 red capsicum, thinly sliced
200g cherry tomatoes
4 spring onions, thinly sliced
1/2 cup loosely packed fresh coriander leaves
1/4 cup loosely packed fresh Thai basil leaves
1/4 cup loosely packed fresh mint leaves
Sweet chilli dressing
1½ tbs sweet chilli sauce
1½ tbs fresh lime juice
3 tsp fish sauce
2 tsp brown sugar

Method

  1. To make the sweet chilli dressing, combine the sweet chilli sauce, lime juice, fish sauce and sugar.
  2. Place half the salmon in a large bowl with the cabbage, carrot, cucumber, capsicum, tomato, spring onion, coriander, basil and mint. Toss to combine.
  3. Drizzle with sweet chilli dressing and toss to combine.
  4. Top with remaining salmon to serve
