Salmon Patties

Ingredients

serves four

105g tin Pink Salmon (drained)
100g sweet potato (diced & steamed)
20g chopped tomatoes
20g fresh whole meal bread crumbs
10g shallots (chopped)
10g celery (diced)
1 egg
Pinch of Canyon pepper
Little lemon zest & a little Juice

Method

  1. Mix all of the above and divide into approximately 43g each Pattie (makes 7).
  2. Roll in the fresh whole meal bread crumbs.
  3. Spray a baking tray with olive oil spray place the patties on the tray and then spray the tops of patties and bake in a fan forced oven @ 190c until golden brown.
