Mediterranean Pear and Ricotta Salad

Ingredients
serves four
3 pears quartered and cored
80ml olive oil
80g walnut pieces
60ml white balsamic vinegar
2 tbsp honey
80g mixed salad greens (e.g. rocket and baby spinach)
150g low fat cottage cheese
Method
- Preheat oven to 220°C. Place quartered and cored pears on baking tray.
- Drizzle with 1 tbsp olive oil. Bake for 20-25min.
- Warm 60ml olive oil over medium heat, add 80g walnut pieces and cook 3-5minutes. Set aside
- Add ¼ cup balsamic vinegar and 2 table spoons honey to walnut mixture.
- Divide 80g salad greens on 4 plates, top with pears and low fat cottage cheese. Drizzle with dressing.
