Brown Rice and Bean Salad

Ingredients

serves four

2 cups brown rice, cooked and cooled
1 x tin 400g four bean mix (no added salt), drained
1 medium tomato chopped with juices
½ cup jalapeno finely chopped
½ cup chopped coriander
Juice of 1 lime

Method

  1. Combine the cooked rice with drained beans, tomato, jalapeno, coriander and lime juice.
  2. Toss well and chill until ready to serve.
